Higgins keeps its focus by using natural ingredients from the Pacific Northwest and combining these with traditional French techniques. Presentations, textures and flavors are all intense and sophisticated. Chef Greg Higgins is an avid organic gardener, growing his own herbs, vegetables and fruits while serving as a board member of Chef’s Collaborative. He has appeared on numerous television programs about cooking and is the author of a number of chapters in cookbooks.
